Rakis is out of the picture for me this year, unfortunately.
Loptr sent me here when I started asking questions on procedures... (I'm getting ready to put my first batch into the fermenter, using a prepackaged kit).

Also, if your going to be at rakis, we're going to have a tasting
competition in the tavern friday afternoon before the feast. itll be
at 3:30
u can bring anything you've brewed, alcoholic or non, and the winner
will get a cool prize.

Talk to Medryn he is chalk full of info on how to stop the
fermentation and adding more honey afterwards to sweeten it up if
need be.

I am fermenting strawberries no grapes at all. I am doing two types one has white sugar to make a sweet wine the other is using agave (sp?) to make a less sweet version. I am not to worries about bacteria as I boiled the strawberries before mashing them for the wine it should have killed all the bacteria.

I have a barley wine I have been fermenting for a couple months.
I racked it to the secondary Sun.
It tastes yummy, cant wait to see it aged a few years.

Something else that I would like to talk about with you guys. I was talking with Sir Dan The Man and Takezu, and one of them brought up the genius fact that a beverage doesnt have to be alcoholic to be brewed. So, after relizing this, the rules of the tasting competition at rakis are being modified. If you want to enter something non-alcoholic then great! ( i think booze is better...but thats probably cause i turn 21 a week before rakis....so my vision is getting a bit pre-emptivly blurry...er something )
Anyways, Greetings Obie and Ariston, I hope you both will jump right in and participate in discussion, and even bring something to rakis!
